Agree the menu and who buys the ingredients before the day. Ask about the chef's specialisation, since desi, continental and BBQ cooks are rarely the same person. For monthly placements, insist on police-verified CNIC and references from two previous households, and run a paid trial week before committing to a long arrangement.
